Last night and today our house has been filled with the lovely scent of Jynger aka Ginger to celebrate St. Nicholas Eve/Day. I'm crazy about holidays and my kids always know that almost every day from Thanksgiving to Epiphany is celebrated in our home. Good thing that calories don't count during Christmas season.

The recipe I'm about to share is a modified version of The Ginger People's Chewy Ginger Snaps recipe.  I have always appreciated Molasses Crinkles, but when I put crystallized ginger bits into them, it was an intense appreciation! :)

These delicious cookies are named after our furry favorite, Chewie and one of the great female leads in Star Wars, Jyn Erso.

Without those luscious bits of crystallized ginger in the cookies, they just aren't the same. We shaped the cookies both in balls and in Star Wars shaped silicone molds. Both taste the same, but the ones in the silicone molds came out much darker. The recipe for the Vegan Candied Jynger Chocolate Truffle Candies are on a separate page.

Chewie Jynger Snap Cookies Recipe
This delectable Star Wars recipe is modified from Chewy Ginger Snaps Recipe from The Ginger People. Of course, this is even better!!! :)
  • 3/4 cup salted butter
  • 1 cup dark brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 3/4 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 2 1/4 cups unbleached all-purpose flour
  • 3-4 oz Crystallized Ginger Chips
1. Preheat oven to 375 degrees Fahrenheit. 2. Cream butter, sugar, and molasses together. Add spices and baking soda. 3. Beat in egg. 4. Mix in flour and crystallized ginger chips. 5. Form 1 inch balls and roll into granulated sugar. Put on parchment paper lined baking sheet about 2 inches apart. Sprinkle the top of each cookie with a couple of drops of water. 6. Or lightly spray silicone Star Wars shaped molds with non-stick cooking spray. Fill in to at least 3/4 full with dough. sprinkle with granulated sugar and a couple of drops of water. Sit silicone mold on parchment lined baking sheet. 7. Bake 8-10 minutes. Let cookies cool until firm and then remove from baking sheet/molds.  8. Delicious served as is, or you can lightly glaze them.
