Last night and today our house has been filled with the lovely scent of Jynger aka Ginger to celebrate St. Nicholas Eve/Day. I'm crazy about holidays and my kids always know that almost every day from Thanksgiving to Epiphany is celebrated in our home. Good thing that calories don't count during Christmas season.

The recipe I'm about to share is a modified version of The Ginger People's Chewy Ginger Snaps recipe.  I have always appreciated Molasses Crinkles, but when I put crystallized ginger bits into them, it was an intense appreciation! :)

These delicious cookies are named after our furry favorite, Chewie and one of the great female leads in Star Wars, Jyn Erso.

Without those luscious bits of crystallized ginger in the cookies, they just aren't the same. We shaped the cookies both in balls and in Star Wars shaped silicone molds. Both taste the same, but the ones in the silicone molds came out much darker. The recipe for the Vegan Candied Jynger Chocolate Truffle Candies are on a separate page.

Chewie Jynger Snap Cookies Recipe
This delectable Star Wars recipe is modified from Chewy Ginger Snaps Recipe from The Ginger People. Of course, this is even better!!! :)
Ingredients
  • 3/4 cup salted butter
  • 1 cup dark brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 3/4 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • 2 1/4 cups unbleached all-purpose flour
  • 3-4 oz Crystallized Ginger Chips
Instructions
1. Preheat oven to 375 degrees Fahrenheit. 2. Cream butter, sugar, and molasses together. Add spices and baking soda. 3. Beat in egg. 4. Mix in flour and crystallized ginger chips. 5. Form 1 inch balls and roll into granulated sugar. Put on parchment paper lined baking sheet about 2 inches apart. Sprinkle the top of each cookie with a couple of drops of water. 6. Or lightly spray silicone Star Wars shaped molds with non-stick cooking spray. Fill in to at least 3/4 full with dough. sprinkle with granulated sugar and a couple of drops of water. Sit silicone mold on parchment lined baking sheet. 7. Bake 8-10 minutes. Let cookies cool until firm and then remove from baking sheet/molds.  8. Delicious served as is, or you can lightly glaze them.

Candied Ginger Chocolate Truffles Recipe - Star Wars Style
It's St. Nicholas Eve and we are eating Star Wars desserts made of Ginger, as part of our family tradition. Tonight, we will leave our shoes in the foyer or by the fireplace and tomorrow find Star Wars gifts left in them.

I don't know about you, but I really liked the role of Jyn Erso. And I sat in the theater...bawling...at the end of Rogue One. That was not the ending I wanted. :(  My bestest friend told me that the Starship Enterprise beamed her up and she's fine.  :)  I expect to see her in the next Star Trek movie. LOL!

The molds I used are reasonably priced on amazon and ThinkGeek. I bought 8 different molds for under $20. The great thing about getting Star Wars silicone molds is that you can make ice cubes, candy, cookies, cakes, soap, bath bombs, etc in all these cool Star Wars shapes. These vegan truffles are simple to make and delicious to eat.

Most of my recipes are made with dairy, but tonight I thought I'd make a Star Wars recipe that most people can enjoy, including vegans. So here's to dairy-free Star Wars desserts!  These are perfect for holiday parties. Melt in your mouth, soft, scrumptious chocolate truffles with tasty nibbles of ginger! Mmmmm!

Jyn Erso's Vegan Candied Jynger Chocolate Truffles Recipe
Star Wars Vegan Candy recipe named after Jyn Erso from Rogue One. We use Dark Chocolate and Candied Ginger.
Ingredients
  • 17.6 oz Trader Joe's Dark Chocolate Bar
  • 14 oz can Trader Joe's Coconut Cream, extra thick and rich
  • 1 teaspoon ground Ginger Spice
  • 4 oz Crystallized Ginger Chips (finely chopped)
Instructions
1. Melt dark chocolate over medium heat in microwave on in bowl over hot water. 2. Stir in coconut cream, but the cream part only...not the liquid at the bottom of the can. 3. Add in ginger spice and crystallized ginger chips/pieces and stir well. 4. Spray candy molds lightly with non-stick spray. Pour in truffle mix and freeze for 15+ minutes to set. 5. Release from candy molds onto parchment paper. Keep refrigerated unless serving.

This year my teenagers have some very cute Christmas yoda shirts to wear for their Christmas photo. However, as I looked into buying them Santa Yoda Hats online and in stores, I found most of them are only made in child or small adult sizes.

I'm not one to just give up when I have an idea, so I decided to craft them myself. I figured I could buy cheap large adult santa hats at walmart for under $3 each, buy some green felt (only one rectangle for each set of ears), green pipe cleaners, and glue sticks. All of this came out to less than $5 for a hat and they FIT my teenagers comfortably.

And while I was at it, I realized these hats...when stuffed a bit...make great tree toppers or other Christmas decor. My teens love these so much, they asked if I could next make them Yoda Beanies for their heads this winter! Oh yeah, I'm a Star Wars Do It Yourself Mom! I can do that!!!

Just print out the template, cut out the ears. and copy onto felt, but be sure to leave some extra space around each ear as you trace it, as you will need to roll down extra material around the pipe cleaners and the bottom too. I used my fine point disappearing ink made for tracing patterns onto material.

I only put a pipe cleaner on the top of the ears. I left the excess of the pipe cleaner sticking out  of the ears so I could then hot glue it over the side of the trim to help secure the ear into place. I also hot glued the ear to the side of the fur trim on the hat.
