Candied Ginger Chocolate Truffles Recipe - Star Wars Style
It's St. Nicholas Eve and we are eating Star Wars desserts made of Ginger, as part of our family tradition. Tonight, we will leave our shoes in the foyer or by the fireplace and tomorrow find Star Wars gifts left in them.

I don't know about you, but I really liked the role of Jyn Erso. And I sat in the theater...bawling...at the end of Rogue One. That was not the ending I wanted. :(  My bestest friend told me that the Starship Enterprise beamed her up and she's fine.  :)  I expect to see her in the next Star Trek movie. LOL!

The molds I used are reasonably priced on amazon and ThinkGeek. I bought 8 different molds for under $20. The great thing about getting Star Wars silicone molds is that you can make ice cubes, candy, cookies, cakes, soap, bath bombs, etc in all these cool Star Wars shapes. These vegan truffles are simple to make and delicious to eat.

Most of my recipes are made with dairy, but tonight I thought I'd make a Star Wars recipe that most people can enjoy, including vegans. So here's to dairy-free Star Wars desserts!  These are perfect for holiday parties. Melt in your mouth, soft, scrumptious chocolate truffles with tasty nibbles of ginger! Mmmmm!

Jyn Erso's Vegan Candied Jynger Chocolate Truffles Recipe
Star Wars Vegan Candy recipe named after Jyn Erso from Rogue One. We use Dark Chocolate and Candied Ginger.
Ingredients
  • 17.6 oz Trader Joe's Dark Chocolate Bar
  • 14 oz can Trader Joe's Coconut Cream, extra thick and rich
  • 1 teaspoon ground Ginger Spice
  • 4 oz Crystallized Ginger Chips (finely chopped)
Instructions
1. Melt dark chocolate over medium heat in microwave on in bowl over hot water. 2. Stir in coconut cream, but the cream part only...not the liquid at the bottom of the can. 3. Add in ginger spice and crystallized ginger chips/pieces and stir well. 4. Spray candy molds lightly with non-stick spray. Pour in truffle mix and freeze for 15+ minutes to set. 5. Release from candy molds onto parchment paper. Keep refrigerated unless serving.
